Delicious and Healthy Pumpkin Pie Recipe

From Thanksgiving though New Years pumpkin pie is a staple of the American Diet. This recipe is from Chef Kevin from Community Servings. It’s delicious so I’m sharing it with you! They provide food that has the ability to heal not just the sick, but the loved ones who care for them.

Chef Kevin loves sweet potato pie! Each year he bakes more than 600 sweet potato pies for Community Servings’ Thanksgiving fundraiser, Pie in the Sky. Over the years Chef Kevin has perfected his recipe for creamy, subtly- spiced sweet potato pie. Enjoy this recipe from our kitchen to yours

Ingredients (serves 6)

  • 1 9” pie shell
  • 1 lb sweet potatoes (about 3 medium), roasted and mashed
  • 2 eggs, lightly beaten
  • ½ cup evaporated milk
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ½ cup melted butter
  • ½ teaspoon grated nutmeg
  • ¼ cup brown sugar
  • ½ cup granulated sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon salt

Preparation

  1. Place sweet potatoes into mixing bowl and add all liquid ingredients slowly one at a time while mixer is running at its lowest speed. Scrape the sides of the bowl often.
  2. Then begin adding the dry ingredients in the same manner continue to mix batter until all ingredients are well mixed, pour into pie shell and bake at 325 Fahrenheit for 35 minutes until top is golden brown.
